Contemporary takes on Puglian food are unusual in this region, where there's still a fierce pride in home-style cooking using foraged ingredients and recipes concocted centuries ago.

Begin by visiting some of the main attractions in Bari. See the Basilica of Saint Nicholas, the ancient Cathedral of Saint Sabinus and the Swabian Castle.

You will discover picturesque and hidden places with your expert guide as they eventually lead you to several tasting stops. Thanks to its porous but mineral-rich limestone soil, proximity to the sea and hot summers, this is also where Italy's most delicious food is produced: big, fat, purple and green figs, long stems of velvet-red tomatoes; bunches of herbs still dusted with salt from the air; and artichokes that thrive in sandy coastal fields.

Your journey continues to Salumeria, a historical delicatessen in Bari. Here you will find the place to always be refined, elegant and clean. They serve only high quality, fresh products and the owners and staff are very competent. Taste a sampling of cheeses and salami that are typical products of Puglia as well as try the burrata, a fresh Italian cheese made from mozzarella and cream.

Next is dessert, stop in a gelateria to find out the secrets of this home-made ice cream. Gelato is an authentic Italian sweet and you will have a selection of flavors to choose from and sample.

End your amazing tour by taking in the modern French part of the city along the water where you will see opera theaters and luxurious shopping boutiques.
